Snapshots is characterized by its scattered arrangement of photos on textured backgrounds of five different colors. All are enclosed in a thick white border. The cover can have 1, 3, or 6 scattered photos, the inside flap can have one photo, text, or both, and there are blank, one-, two-, three-, four-, and six-photo layouts, plus the standard three introduction pages, Chapter page, and maps page. Hoefler Text is used for most of the text, except for Cochin in the inside flap. In the default layout, the background colors vary.
The only changes to the Snapshots layout in iPhoto '09 are the addition of three introduction (or text) pages and the ability to create maps. As far as I can tell, everything else has remained the same.
The Snapshots theme offers five light pseudo-textured pastel colors for the backgrounds for the outside and adds white and the Photo Background option (formerly Palm Tree) to let you use any image you want for the background of the inside pages.
With a single photo, the layout and caption placement depends on the original orientation of the photo:
With three photos, you get a large photo to the left and two smaller ones stacked on the right. The caption goes below. The photos are displayed at their original orientation, but the orientation doesn't change the layout around.
You can also create a cover with six photos. The photos are scattered in two rows. The original orientation is maintained. Here's one with a green background:
Like Simple Border and others, if you use the full bleed layout, your photos are zoomed and cropped to fit.
Right-click the photo to choose "Fit Photo to Frame Size" to keep the photos at their original orientation and proportions:

These fragmented layouts always seem cooler than they are useful. They too change according to the orientation of the photos. The caption is optional.
These layouts are very similar to Simple Border except that the photos are jauntily put on a slant. Two horizontals and two verticals:

I wish you could choose which direction the slant goes in, but you can't.

When you use photos of different orientations, the layout stays pretty much the same:
These are virtually the same as the four-photo layouts, just with more pictures... Moving photos of different orientations around doesn't drastically change the layout.
